lb. sweet potatoes, peeled, cooked and mashed

Tbsp. butter or margarine, melted, divided

1/4

cup orange juice

1/2

tsp. salt

NABISCO Ginger Snaps, finely crushed

1/2

cup PLANTERS Chopped Pecans, toasted

Tbsp. brown sugar

Make It

PREHEAT oven to 350°F. Mix potatoes, half of the melted butter, the orange juice and salt until well blended. Spoon into 2-qt. casserole dish.

MIX remaining melted butter, the cookie crumbs, pecans and sugar until well blended; sprinkle evenly over potato mixture.

BAKE 30 min. or until potato mixture is heated through and topping is golden brown.

How to Toast Nuts

Toasting nuts adds crunch and intensifies their flavor. To toast nuts in the oven, spread nuts in single layer in shallow baking pan. Bake at 350°F for 8 to 10 min. or until golden brown, stirring occasionally. To toast nuts on the stovetop, place nuts in ungreased skillet. Cook on medium heat until golden brown, stirring frequently. To toast nuts in the microwave, place up to 1 cup of nuts in a microwaveable shallow dish. Microwave on HIGH until fragrant and crisp, stirring every 30 sec.

It was very good. My family loved it. After reading the other comments I cut the salt in 1/2 and added 2 extra tbsps of sugar. However, next time I make this I plan on only using 1/2 the amount of orange juice, the taste of orange juice was a tad bit overwhelming.

Added this one to my Thanksgiving menu last year. Presents well on the table got ooos & ahhs. Very easy to prepare, WONDERFUL FLAVOR. You can eat this one hot or cold with leftovers. This one is now a permanent dish on my Thanksgiving menu.
