Just returning to a full-time job after 12 wks maternity leave, making dinner when I return home isn't something I have a lot of time for, nor do I have the energy. I had leftover pork tenderloin in my refrigerator and needed ideas on what to do with it. I found this stir-fry recipe, tried it and I must say, I was truly impressed. The prep time was quick and cooking time even faster. The meal was tasty and delicious... even the leftovers that I brought into work today and reheated were just as good!
