Easy to make. You could add a lot of different ingredients (like sausage, hash browns, etc.) for a different varity of flavor.

I made this without the cilantro and I added small pieces of brocolli to it. Easy to make & tasty. Good as left overs too.

I didn't like this recipe at all. The cilantro was too strong and didn't go well. It didn't have enough cheese either. I added a couple of extra veggies, but nothing seemed to work together.

Wonderful meal for a low carb diet, and the kids loved it.

Fresh herbs, I used the recipe suggested cilantro, make this frittata special. To round out the meal begin with split pea soup, plate the frittata with a side of tomato slices, grilled and drizzeled with E.V. O. oil.

It really hit the spot. It was quick, easy and didn't have any leftovers. Always the best sign.

I have not made this particular version -- I make one with grated zucchini squash, diced onion, 2% mozzarella cheese, reduced fat Parmesan cheese, and a little flour. I make a big "pie" every week and then just keep it in the refrigerator -- it's great for breakfast, lunch, dinner or snacks -- and if I get hunger pangs, I know I always have something healthy and satisfying in the refrigerator that is good cold or warmed up. I just read an article that had fritatta/low-fat quiche listed as one of the top 10 diet foods for its nutritional content and ease of preparation.
