This was so fast, easy and light. Even my 5yr. old ate it. I am making it again tonight!

I've made this several times. It is a great recipe to modify. The last time I made it, it omitted the ham. I used 5 whole eggs and 5 egg whites, 1.5 cups shredded mex. cheese. I added 2 tsp. hot sauce, 1/2 yellow pepper chopped, 2 roma tomatoes chopped, handful of chopped spinach, and 1/2 cup corn. Bake for 45 minutes, and it is GORGEOUS and DELICIOUS.

I made this recipe for brunch and it was thoroughly enjoyed by all. I used milk instead of water. I will consider making it for dinner also as my husband really liked it.

All my boys LOVED this recipe. I probably should have made two! I actually used Egg Beaters instead of eggs and added about 6 oz of ham instead of 4 oz. This was a delicious, EASY recipe. Served it with fruit and english muffins ... a great dinner. (I did bake mine a bit longer than the recipe called for. Maybe because I used Egg Beaters it took longer to cook?)

My family loved this frittata. I only wish that I had made 2. I will definitely make this again adding the prior suggestions of onion, bell peppers and bacon.

Not a fan of cilantro, but added some mushrooms, onion and green pepper and it was terrific. 'Bout time there was a low-carb recipe here...I have been asking for low-carb options for months!!
