Loved it! I put spinach in the recipe and my 5 & 3 year old could not get enough. I will definately make this easy dish again.

I love this dish. It changes so easily. You can make much more and change up the ingredients and it gets raves everytime.

This is also good poured into an unbaked pie crust and baked as a quiche. I've made a ham and swiss frittata that my kids love. Add some shredded Swiss cheese and chopped ham to the egg mixture. Served with a fresh fruit salad, it's an easy weeknight dinner, too. My kids love it!

I've been making this for years. I typically add seafood ... Any or all of the following ... Scallops, shrimp, Lobster & "Sea Legs" I call it "Seafood Frittata"

When I make my fritatta's I add softened cream cheese and beat it in with my eggs... keeps it SUPER light and fluffy and moist. These Frittata's also freeze BEAUTIFULLY! I make TONS in advance, and freeze them into portions and hubby and I eat them nearly every day for breakfast. You can change you meats by using bacon, ham, sausage, add different veggies like broccoli, asparagus, spinach, green/red/yellow peppers, you can also add salsa and you can also make it totally vegetarian. So we never get tired of Frittata's! Yum!

I added a little milk instead of the water. It was delicious. I made this receipe with fresh Italian sausage and it was delicious. I too would love to see more low carb recipes.

I make this frequently adding a 1/2 cup of my favorite salsa and turkey instead of ham. Never any leftovers!

I am looking forward to trying this for dinner tonight. We enjoy cilantro and grow it (with other herbs) in our yard. Although high protein meals are preferred in our house, there's always room for a good balanced meal too! I will serve this with some fresh fruit for some "healthy carbs".

I have made this numerous times and loved every one of them. I have used thin sliced ham and even baked ham diced into small pieces. It is great with the crescent roll/cream cheese & honey recipe and a chilled glass of white wine. I have served it for dinner and lunch and it also makes great leftovers. Try it you will like it!!
