When I make my fritatta's I add softened cream cheese and beat it in with my eggs... keeps it SUPER light and fluffy and moist. These Frittata's also freeze BEAUTIFULLY! I make TONS in advance, and freeze them into portions and hubby and I eat them nearly every day for breakfast. You can change you meats by using bacon, ham, sausage, add different veggies like broccoli, asparagus, spinach, green/red/yellow peppers, you can also add salsa and you can also make it totally vegetarian. So we never get tired of Frittata's! Yum!
