I read the comment from SuzyCompuzy (?) and I wholeheartedly agree! We need MORE low carb recipes like this. I will use it soon because it is now Passover. Pasta, rice, flour, legumes, corn, etc. cannot be eaten for 8 days! Try doing that (and MORE) for 8 days!!! (And, something other than HAM.)

I made this for brunch for company and it was enjoyed by all. I would definately make it again for a quick and easy dinner, too.

This is a good base for an excellent breakfast. I added some cooked turkey bacon, S&P, and onion and it was delicious!

Great recipe, especially if you have leftover veges. It is a little light in taste, but a bit of pepper and salt should do the trick. Would definately make again.

I made this tonight, it was very easy, quick, and oh so tasty. After a long day @ work, this is the perfect meal to make and eat.

I halved and tried this recipe for the first time last Sunday, and heard from my husband for HOURS how good it was, and that 'this recipe is a Keeper'. It was extremely quick and easy to make, and tasted wonderful, the cilantro really made it special. I will definitely be making this again soon!

Absolutely delicious. I add vine-ripened tomatoes and fresh spinach leaves to mine. I love the taste cilantro adds to this dish.

Love the cilantro flavor. Next time I will add green chiles too. Very easy to make.
