I make this cake every year for my son on his birthday. (he's now 26!!) It's his all time favorite. I make mine in a 9 x 13 pan (one large layer, instead of two rounds), and I use Cool Whip for the topping. I use either fresh strawberries (when in season) or frozen, strain the juice, add the juice to the jello mix and use that for the cake layer, then take the strawberries and mix them with the Cool Whip, spread it on the top and decorate with more strawberries. My kids love it -- it's light and delicious.
