JELL-O Poke Cake

This cake has seen its share of birthdays, holidays, and company parties, and it's always greeted with a "wow!" Surprise 'em at your next gathering with this classic.

what you need

Take 2 cups boiling water, 1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, and mix & match your recipe from these options...

	cake layer options	JELL-O Gelatin choices
	white cake	Strawberry
	yellow cake	Berry Blue
	spice cake	Orange
	chocolate cake	Cherry

Then follow our 3 simple steps:

PLACE 2 baked 9-inch round cake layers, top side up, each in clean 9-inch round cake pan. Pierce cakes with large fork at 1/2-inch intervals.

STIR boiling water into 2 pkg. (4-serving size each) JELL-O Gelatin in medium bowl at least 2 min. until completely dissolved. Carefully pour gelatin evenly over cake layers. Refrigerate 3 hours.

DIP one of the cake pans in warm water 10 sec.; unmold onto serving plate. Spread with about 1 cup of the whipped topping. Unmold second cake layer; carefully place on first cake layer. Frost top and side of cake with remaining whipped topping. Refrigerate at least 1 hour or until ready to serve. Decorate as desired. Store leftover cake in refrigerator.

Special Extra

For colored frosting, gently stir a few drops food coloring into COOL WHIP Whipped Topping.

Chocolate Hearts

Drizzle melted BAKER'S Semi-Sweet Baking Chocolate onto wax paper in a heart shape. Refrigerate 5 min. to set. Gently peel and use for garnish.

Substitute

Prepare as directed, using COOL WHIP LITE Whipped Topping.

I like to mix in a coordinating pudding with the Cool Whip (make box of instant pudding and fold in whipped topping). My favorite is lemon cake with lemon gelatin frosted with lemon pudding and Cool Whip. If there aren't matching pudding flavors, just use vanilla and you can always use food coloring for the pudding if you're using an outlandish gelatin color.

I make this cake in a 13x9 pan. For the topping I make a small box of instant pudding in with the Cool Whip. Once it's chilled the topping is a little firmer that way and tastes good. (I also sometimes will make a lemon cake and use lime jello)

I make this cake every year for my son on his birthday. (he's now 26!!) It's his all time favorite. I make mine in a 9 x 13 pan (one large layer, instead of two rounds), and I use Cool Whip for the topping. I use either fresh strawberries (when in season) or frozen, strain the juice, add the juice to the jello mix and use that for the cake layer, then take the strawberries and mix them with the Cool Whip, spread it on the top and decorate with more strawberries. My kids love it -- it's light and delicious.

I have made this cake many times. To dress it up a bit I put a thin coat of a straberry jam on top or the first layer put on the plate. Top that with sliced straberries and then the whipped topping. Top with remaining layer and cover with whipped topping. Top the cake with 6 strawberries, sliced in half, cut sides down in topping. Place a whole strawberry, in the center of the cake. Everyone loves this cake and it is requested over and over again.

I love making this cake! Had it the first time in home ec class in 1981, and have taken it soooo many places. I am glad to 'find' the recipe again so to speak, cause is a great one for Easter!

It was very flavorful and a big hit with my guests. I made black cherry and tinted the frosting with some juice out of the cherry jar. It made it very pretty with the addition of a few cherries on top. When I cut slices for everyone, I put a stemmed cherry with each slice.

I have made this cake for a long time. In the summer time I make a lemon cake mix with lime jello. I use the white Cool Whip and add about a tablespoon or so of lime jello to it and spread it on the cake when finished. To serve to company I put lime slices on each piece that I cut. You can make a cut in the lime slice to the center and then twist it. This cake is very refreshing, I have been making it for years and everyone loves it.

I made this for a forth of July party using white cake, berry blue and strawberry jello alternating each color. A beautiful red white and blue delight!
