I love these bars. I have made them twice, and they were a hit! The coconut is really light, but adds a touch. I added more coconut both times.

THESE BARS TASTE GREAT. THE COCONUT WASN'T TOO OVERWHELMING. I WOULD MAKE THESE TREATS AGAIN.

These smelled so good in the oven that we ate them warm which we felt was better than the cold leftovers.

These were very good. Nice lemon flavor. Used graham cracker crumbs because that was what I had. Crust seemed a little thick. Might try decreasing it a little next time, but I'll certainly make it again.

Lemon bars are one of my favorite desserts so I have tried lots of different kinds in lots of different places. These are, hands down, THE BEST lemon bars I've ever eaten. Everyone in my house loves them -- even my husband, who doesn't usually care for lemon bars) and my kids, who claim to dislike coconut. Speaking of the coconut, it's a fabulous addition to the recipe. It gives the bars a lovely little crisp on top. My only complaint is it doesn't make enough - they are so scrumptious I have a hard time keeping them in the house for more than one day!

These were refreshing and tasty. My teen daughter loved them as did my husband. For me personally I found them a little sweet but I am not one to eat a lot of sweet things. Everyone else however devoured them in no time. I thought the lemon flavor was good but I also used fresh lemon juice. It was a good summer dessert and I would make these again.

I made this last night and it turned out GREAT!! I did not use the lemon peel in the crust, but now wish I did. I would suggest that anyone who makes this use the lemon peel and fresh lemon juice for more of a lemon flavor. Very easy to make and definitly a keeper!

Loved it. The only problem is that it only makes an 8x8" portion. I used real lemon juice in the mix. Very tasty.
