Creamy Basil & Red Pepper Pasta

Don't panic. 6:00 sneaks up on all of us. Chicken in creamy pureed roasted red pepper sauce served over pasta are a lifesaver any night of the week.

What You Need

cups penne pasta, uncooked

jar (7 oz.) roasted red peppers, well drained

oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Fat Free Cream Cheese, softened

1/2

cup fresh basil

1/4

cup fat-free milk

Tbsp. KRAFT Grated Parmesan Cheese

lb. boneless skinless chicken breasts, cut into bite-size pieces

Make It

COOK pasta as directed on package.

MEANWHILE, blend all remaining ingredients except chicken in blender until smooth. Cook chicken in large skillet sprayed with cooking spray on medium-high heat 3 min. or until no longer pink, stirring frequently. Stir in pepper puree; simmer on medium heat 5 min. or until chicken is done and mixture is heated through, stirring frequently.

DRAIN pasta. Add to chicken mixture; mix lightly.

Prepare using whole wheat or multi-grain pasta.

If fresh basil is not available, use Italian (flat leaf) parsley instead.

My husband and I both really liked this! :) It's another great pasta recipe from this site to add to my repertoire, and I finally got to play with my new blender lol!

I made this for dinner tonight because I thought it sounded good, followed directions exactly and used fresh basil from my garden. I was not impressed, I took a few bites and threw the rest away. My husband thought it was just okay. Won't be making this again.

I have made this a few times now. The sauce is very creamy and has great flavour. I added a little bit more milk to thin the sauce a bit.

Used diced bell peppers instead of roasted red as it's what I had on hand. Would recommend a little more milk next time; sauce is very thick!

I forgot to say in my other posting that I doubled the about of cheese and that I used reg cream cheese and whole milk. I also used whole wheat pasta, barilla brand. I also thought shrimp would be good in it too.

This is a quick, tasty and easy recipe. I did season the chicken with onion powder, garlic powder and some salt and pepper and sauteed it in little oil with pad of butter. Will definitely make again. The family loved it!

This is SO good!! My husband did not believe me when I told him it was light. He said it was as good as any restaurant meal. I thought so too! And it was so easy!
