I also left out the nutmeg, but doubled the amount of the soup (chicken instead of celery), since we like "saucy" foods. Quick, simple (since I had leftover grilled chicken) and good!
I left the nutmeg out of the recipe and enjoyed it a lot. My husband is not a chicken eater and he had two helpings.
If you don't like the flavor of nutmeg, then it's not a good recipe for you. I really didn't like it all that well.
Both my husband and I thought this was good, but not great. The flavor is a little bland, but I would definitely make it again, I would just add my own touch first. Thinking I might try a broccoli-cheddar soup instead of the celery, and the addition ofa little parmesan cheese on top also helped. Also-FYI-make sure to use a very large skillet or pot, because this makes A LOT!
Easy to make and VERY tasty! Even my picky husband liked it!
