Quick and easy! I added crescent rolls to the top for the last 15 minutes of baking time and it was delicious! I will be making this again!

Yummy!! My husband had thirds and both my teenage kids liked this. Made a few changes. I used shredded hash brown potatoes and Mexican grated cheese blend since that's what I had on hand. Also added about 1/4 c. salad to avoid it being dry since I didn't have Velvetta. Topped the casserole with the grated cheese and some crushed black bean and garlic dorito chips (great way to use up the last of the chips in the bag). Super tasty.

Great recipe. I took others advice and used the O'brien potatoes (cubed frozen potatoes w/ peppers and onions). I doubled the recipe, and I also still put in one small onion and one small green pepper. Even my picky eater loved it. Will definitely make again!

Just like so many others have said, really easy, very delicious meal. I also made it with the fried egg (New Mex style), was a hit, everyone thought that was pretty "neat" to have for dinner. Made me think, maybe next time make it into an egg bake, hmm

I made this to give to a family at church, but took a taste. It was yummy!! I used a frozen green peppers and onion mix. I will be makikng it again for me!

My husband and my 5 kids all LOVED this. I used a green pepper, onion, and canned corn (drained). I also used shredded hash browns and it turned out wonderfully! Next time i will plan on serving a fried egg on top per someone else's idea - hubby thought that sounded good, since it is kind of like a "mess" anyway.

I read the reviews and, like others suggested, used o'brien potatoes (you know, the diced potatoes with onions and peppers), mexi-corn (whole kernel corn with peppers), and Velveeta Mexican Mild cheese. IT WAS WONDERFUL!!! And even better the next day!!! Definitely will make this again and again.

I made this last night, It was tasty...but I wanted more! I think I will follow the advise of one reviewer and try it with taco shells or with nacho chips!
