I made this last night for my 3 daughters (ages 3, 8, 14), they loved it. I sprinkled it with shredded mexi-blend cheese after baking and I put a dollop of sour cream on top of each serving. Yummy!
I fixed this for my family and they absolutely loved it !!
I tried this recipe on my husband & daughter when she came home from college. They both enjoyed it & will make it again. Was quick & easy.
Simple, simple to make! I topped mine with jalapenos and salsa in the last 10 minutes. Everyone in my family loved it.
My boyfriend enjoyed this recipe a lot, he ate it wrapped up in a tortilla shell and said it was "very good".. I thought it was just ok, but I'll probably make it again for him.. Maybe next time I'll leave the stuff seperate and let each person mix it if they want to, I think I would like it better not mixed together..
I used fried cubes of potatoes instead of frozen. I did not bake it, I left it in the skillet, and turned out to be delicious! Would've rather made it with scrambled eggs to go into a breakfast burrito or something similar! I will try it that way next time...
I may try this one again with some modifications. The taco seasoning made the texture a little gritty, I would probably cut the seasoning in half. Also the potatoes would have tasted better if they were fried up first instead of added frozen.
My sister made this and brought it to work. IT IS EXCELLENT!!! So good in fact I had to get on line and add it to my recipe box!!!!
Instead of the Taco Seasoning Mix, I added a cup of medium hot salsa and substituted mozzarella for the Velveeta. Turned out very good!
In a tortilla it's not bad, make sure to not over stir - the potatoes get very mushy.
