My family really like this dish! I used green peppers (next time red) and I only used half of the velveeta and it was delicious! Dinners are never boring in my house thanks to Kraft!!

This was easy and really good. Next time I think I'll thaw the potatoes, they take to long otherwise and fall apart. I added a can of diced tomatoes, juice included to give it a little more moisture, it seemed a little more Tex-Mex that way. We'll have this one pretty often.

It took a little longer to cook the potatoes, but was worth the wait!

The hashbrowns started falling apart, but it was still pretty good. Very cheesy, almost too much. It's a dish you can alter to fit your moods, by adding different veggies or pasta shapes, etc. I'll try it again.

I had regular potatoes and decided to to cut those up and use them instead. i cook the potatoes in a separate skillet first though. It still turned out really good. everyone loved it.

This recipe was even better than I thought it would be. I made one modification which was to use hash browns with pepper and onion already in them instead of cutting peppers and onions myself. It was fantastic! I thought we would have leftovers but everyone loved it. If you are not a Velveeta lover, you won't taste it but if you want to leave it out, I think it would be great even without it.
