I used Potatoes O'Brien with the onions and green peppers already in there so I skipped that step. For me, the potatoes cooked fast and dinner was a BIG hit. Even better the next day for lunch!

My family enjoyed this recipe. I substituted "salsa con queso" for the Velveeta cheese to give it more zing, and some members of the family topped their servings with sour cream. I will note that it does take longer to cook than 5-7 minutes to cook the potatoes. It took closer to 15-20 minutes.

This recipe was alright. It takes longer than 30 minutes to cook, to cook the potatos all the way thru. I have made a tex-mex recipe before that included stewed tomatos, kidney beans, and shredded colby cheese and found it much more flavorful. The potatos in this recipe taste bland and I prefer shredded colby over Velveeta. And we always add sour cream.
