I made this for dinner last night and three bites in everyone was telling me that I could make it again and I've got some picky eaters in my house! I did substitute low-fat ground turkey in place of the beef and 2% velveeta which helped to bring down the calories some.

YUMMO!Next time would use less cubed hash browns. Whole family liked it a lot. We'll try it next time with black olives and sour cream.

It all comes together well.I used half of Velvetta & half cream cheese The left overs{not much} were eaten the next day like a taco salad with chips. I'll make this again. Thanks for the recipe

Quick, easy weeknight meal. It has great flavor without being too spicy. I usually hate Velveeta, but it really made this dish. Would be great served with a dollop of sour cream and some chopped green onion. I served it with a green salad dressed with equal parts ranch, sour cream, and salsa and sprinkled with crushed tortilla chips and grated cheese. Leftovers were great the next day!

I din't have frozen potatoes so I cut my potates up really small and cooked them for 5 min in a bowl of water in the microwave to soften them. I also didn't have velveta so I used some nacho sauce that I had left over from a taco kit. I think this will turn out great. I hope the kids eat it!

Made this last night for the fam and the kids literally licked their plates clean and my husband went back for seconds which he doesn't do very often. Very good recipe that's good for the budget to.
