This was just okay to me, i did change it up by adding a can of chunky salsa, which did spice it up a lot. I already make a dish similiar to this, and i think i'll stick to that recipe instead.

I forgot to buy the potatoes, so I substituted rice. It was really good!

The potatoes took a lot longer to cook so I would cook them ahead of time. Also, I added chili powder to make it spicer. Really good, not too cheesy.

Family really liked this meal and said we should keep it in our weekly meal schedule. I thought the velveeta overpowered the seasoning somewhat. I would probably add rotel to this dish in the future to give it a little kick.

My family really like this dish! I used green peppers (next time red) and I only used half of the velveeta and it was delicious! Dinners are never boring in my house thanks to Kraft!!

This was easy and really good. Next time I think I'll thaw the potatoes, they take to long otherwise and fall apart. I added a can of diced tomatoes, juice included to give it a little more moisture, it seemed a little more Tex-Mex that way. We'll have this one pretty often.
