Made per the instructions, but I prefer a bit more cilantro and extra fresh ground black pepper.

I made this recipe and I thought I was very good. I will be making it again. However I used only a half of a tsp of cumin because it has a very strong flavor and can be overwhelming. Anyone who likes black beans, I'm sure will like this recipe.

Quick & easy to make. Took this to an office Salad Luncheion where it got rave reviews. An excellent choice for healthy eaters.

This was a great lowfat recipe. I added some black olives and parmesan cheese for additional flavor.

I also make this recipe with corn instead of rice. You can make it in under 10 minutes and it works great for potlucks.

An excellent recipe for the summer time. Easy and quick to make and keeps well. I diced the red pepper instead of strips. My 10 yr. old grandson put some into a tortilla!! Have also thought of adding diced chicken to the salad.

I have made this salad quite a few times. It is excellent after a spicy, hot Mexican meal. In fact I have made it many times and will be making it soon for a graduation party.
