Black Bean and Rice Salad

This was a great side dish for baked chicken. Has a nice summery flavor. Would be easy to make and take to a covered dish with no worries that someone else would have the same thing. I couldn't find the peppercorn dressing so I used ranch with sour cream.

I used the Minute Brown rice instead of the white rice. Everyone really loved it. There was none left over. It's a small recipe though. If you have a large family or you want to make it for a group, you should probably double or triple the recipe.

This was a great side item to add to dinner. A very fresh taste. I love all the ingrediance mixed together. I made this and put it in the fridge overnight before even trying it. WOW it was great! Very easy to make. I also had a hard time finding the right done light dressing so I got the real stuff and put only a 1/4 a cup in it and it was great! I will make this again and again. My family loved it.

This was good, but next time I would punch it up a little. Maybe add some chopped red onion and red pepper flakes. Very easy to make.

Very tasty! Unfortunately, my local grocery store did not have the lowfat Peppercorn dressing so I substituted the lowfat Ranch. I was worried about the strong tastes of cilantro and cumin being too overpowering but, they add a nice touch. It's a great dish!

This was an easy recipe to take to a potluck. Easy to make the night before. The longer it sits the better it is. I didn't like it when I first tasted it, but the next day it was great.

I made this for a party and everyone loved it. It tastes fresh and it's healthy, plus it's extremely easy to make. I'm definitely making it again.

I added a few extras that made this recipe superb. I added some Adobo seasoning (with Cumin) and extra red peppers. Right before serving I squeezed fresh lime juice over the top and my husband just loved it!

This was good. I like to add more cumin and little less dressing-just enough tto coat the mixture.
