I used feta cheese instead of Colby and Monterey, it was really good. I also stufed tomatoes with this vegetable mix which I thought was a fun addition.

If my mom had had this recipe when I was little, I would have eaten spinach all the time! This is good & good for you. ** I used a Sun-dried tomato dressing & it was just as good as the original.

I did add some chopped onions but this dish is awesome!!!

I took the advice about banana peppers though i did not replace the carrots i just added the peppers at the end. i am not a big fan of rasberry and the peppers kept the salad from being to sweet. This was great will make again!

Before we retired I got off work later than my husband so I tried to have as much of dinner prepared as possible and he finished up. This he prepared from start to finish by himself and it turned out very well and we both liked it. We will have it again.

Yumm!!! I substituted yellow peppers for the carrots and have added sliced mushrooms when I have them on hand. The dressing gives the veggies a sweet flavor. This has become a favorite in our house!

I put the spinach in a platter and added the hot vegetable in to toss. Then I topped it with the cheese and bacon without mixing. That seemed to have helped the cheese and bacon from getting soggy. It made a pretty presentation, too. My family liked the taste but didn't really care for the texture of the broccoli. I used Cranberry Walnut Vinaigrette and served it with the roasted chicken made from the same dressing. It was a good dinner.

This has a great flavor and was so easy! A nice warm salad for a cool day.
