Broccoli and Cheddar Cheese Soup

I made this recipe while we were at our cottage when unexpected company dropped by. They were extremely fond of this soup as were we.(It was the first time I had made this recipe) The leftovers were just as good as the first time I served this soup. Will definetely male again. Yummmmmy

It can't be beat, so creamy, so dreamy wonderful.

I expected this soup to be much creamier, which i guess it would've been if the cheese was part of the soup, not just a garnish on top of it. It was a bit watery and i do like the other reviewer's suggestion of leaving some broccoli pieces in it. Ingredients call for "1 cup of cheddar cheese," but it doesn't indicate whether this is 1 cup SHREDDED or 1 cup of the solid hunk of cheese, which would be quite a bit different amount than if it was shredded.

It's pretty good if you're in the mood for a broccoli soup. My husband also liked it. I added garlic and celery to the onions cooking and melted the cheese with the soup. I also only blended about half the soup so you still had some good pieces of broccoli.

Its a good basic for the soup ,,but i have made this with cream of mushroom soup and velveta cheese.. gives it a creamy thick base.. add just the right amount of flavor.. give it a try...

Not real flavorful. I've made better.

Boring! Thin and watery with one-dimensional taste - broccoli. I added three slices of minced salami, 1/2 cup of cheddar cheese, 1/4 cup bacon bits and 1/2 cup of cream cheese and - wow! Very tasty, if not particularily "healthy". Also, I question tyhe need to blend it all. It needs some substance.

This recipe definitely needs more flavor, less water, more milk, and more cheese.

I have allways wanted a good brocolli soup recipe, but why add rice to it, could some cream be substitued for the rice? I will try it with some cream to see how it turns out.

My kids didn't like it at all. I even tried adding more cheese, salt and pepper to the soup to give it flavor and it didn't. I would not make it again at all.
