My husband said it was the best dish he had eaten in awhile and my four year old said he wanted it everyday and my five year old gave it a 5 on a scale of 1-5. When they are happy, I am happy!

Very good, but the mixture was a little mushier/runnier than the picture looked. I think next time I will mash less of the mixture or use more potatoes in it. Very tasty and a big hit!

I haven't made this recipe, but a note to A Cook, I don't know what soup recipe you are talking about, but for years (even before it was ever printed on Cambell's soup label) I have added Cheddar Cheese soup mixed with about 1/2 can of milk to my scalloped potatoes and ham. I just layer my potatoes, then onions, ham, and soup mixture, plus any spices I may add (salt, pepper, galic powder, maybe a little basil) and bake until potatoes are tender. Oh, and I use food processor to slice potatoes and onions. Hope this helps. My own opinion on the velveeta, I love velveeta, so I think this recipe would be good.

I have a silly question...When you add the sour cream to the potatoes and mash, do you add it to the 3/4 of potatoes or the 1/4 left potatoes? I think I know, but I want to make sure. This recipe sounds wonderful! Thanks so much!

Yeach!! I love this website, but anytime a recipe has Velveta, I know it is going to taste terrible. There was an alternative recipe listed by someone else with the creamed soup and that was easy and good.

To help reduce more fat, substitute Canadian Bacon for the Ham. YUM !

In reference to naneo's comment - this would be SO easy to halve or even quarter. I really can't see why you couldn't make the whole recipe into two dishes and freeze one up for later. Just be a little creative!

A friend made this recipe and brought it to our church Christmas party. Several of the ladies, including myself and my mother had to have this recipe. The taste of the potatoes was delicious! We will be making this recipe many times in the future.Thank you very much for sending this recipe to me.

I have a better and easier scallop potato recipe. Sliced potatoes (I prefer Red). 1 can cream of mushroom soup, 1/3 c evaporated milk, 1 finely chopped onion, and half a cup montery jack cheese, salt and pepper to taste. Mix wet ingredients, cheese and onion add potatoes put in greased pan. Sprinkle with 1/2 cup of cheese. bake until brown and bubbly. Soup and cheeses can be purchased low fat if desired.
