This was a staple meal when I was growing up!! It also cleaned out the refrigerator of leftover vegetables. Here are a couple of added ingredients for thought. When browning the hamburg, add chopped onions. To the potato mixture on top, added to the mentioned garlic and sour cream, also was added marinated sun-dried tomatoes and SMALL chunks of cheddar cheese. Paprika was sprinkled on the top. To the refrigerator clean-out, added to the mentioned defrosted vegetable was added other missed vegetables, such as red and green peppers, green beans and yes, even broccoli. Our dish was layered as meat on bottom, then vegetables and then potatoes. The picky eaters could separate the layers for whatever they preferred. Make a generous-sized batch!! This meal was good for a leftover meal, a take-to-work meal and would freeze well in portion sized containers or as a casserole dish. Reheat in the oven or microwave. A second meal time saver!!
