Delicious! Here are some changes that I made; I first made the brown rice. I made the rice using 1/2 beef broth and 1/2 water.
I then started the chicken in Kraft zesty italian light dressing. I sprinkled Italian seasoning and Oregano over the chicken while cooking. After chicken was mostly done, I set the chicken on a plate and to the sauce pan I added 1 can of diced tomatoes, 1 can of Ro-Tel. I then added in the rice and the chicken and let that simmer for 10 minutes. I then topped it with mozzarella. I would recommend these changes.
