I did not have cilantro or fresh tomatoes, but it was really good anyway! I feel good because it is nutritious. My husband and I both liked it, and so did our 4 year old son.

Delicious! I love this recipe, you can play around with it adding different fresh herbs like basil or oregano.

I wish I read the reviews before I made this dish because my rice took a lot longer to cook, even so it was good, not great, I substituted parsley for the cilantro. Not sure if I would make this again.

too many tomatoes would reduce the amount of tomatoes or use a can of rotel and increase the water by 1/4-1/2c.

Made this tonight for the first time, and it was very good. With a few tweeks, it will be excellent. I agree with a previous post: use the same amount of rice and water (not the 2:1 ratio). The rice took longer to cook, so I had to keep adding liquid and even covered it for a while. Definitely add some oregano and basil, and maybe cilantro to the rice for more flavor. Will definitely try again! Yum!
