Made this tonight for the first time, and it was very good. With a few tweeks, it will be excellent. I agree with a previous post: use the same amount of rice and water (not the 2:1 ratio). The rice took longer to cook, so I had to keep adding liquid and even covered it for a while. Definitely add some oregano and basil, and maybe cilantro to the rice for more flavor. Will definitely try again! Yum!
