VELVEETA-Cheesy Chicken Rotini

VELVEETA-Cheesy Chicken Rotini recipe

What makes this dish so rich and creamy? The way the cheese melts in and through all the pasta, veggies and slightly hot chiles. All this and it's smart eating, too.

I left out the rotel tomatoes and chilies in this recipe. My family doesn't really like spicy food. It was a little too cheesy. The velveeta overwhelmed everything else! Next time I will probably use cheez whiz, we like that a little better!

I used shrimp & crab meat instaed of chicken~~~I cannot explain how well it turned out! Tasted like Olive Garden or even better... I did take advise and added water. I also added parsley, basil and some garlic garlic(Tastefully Simple). I also used only broccoli cuts. I'm so excited to share this with my family!!!

Intead of using the original rotel I used mild. Came out perfect, a lil kick of spice but not to spicy. My boyfriend loved it! But since he liked it so much he wants me to cook more for him. Oh dear what did I get myself into? :0)

Ialso used chicken broth, which brought out the flavor. My daughter said it was too spicy, so next time I will use less Rotel. Very good!
