Surprised that this tasted so great. I cooked it for my parents and they were skeptical about it but sure enough it didn't last long. My 5 year old enjoyed it too. Who knew!!!

I made this recipe a year ago, and I am making it again now for a New years dinner. Such a simple recipe with such lovely flavors. Its part of the reason I chose to start growing my own beets!

I made this recipe using fresh beets from the local farmers market, carrots included. The bigger the beets the longer they take to cook. Mine did not cook thru and next time I will finish the cook time in the microwave. I halved the ginger and wished I didn't. Excellent recipe and taste. Will make again. To keep hands from being totally red peel skin off under running water.

I have never cooked beets in my life, and this recipe was easy to follow. Turned out great. Hint: I cut one of the beets in two before I wrapped it in foil because it was much bigger than the others. BAD IDEA - beet juice ran out and burned in the pan.

Fabulous!! I made it once and am making it again today. We ate the whole thing in one sitting. I am making a double recipe.
