Our refreshing taco salad can fit deliciously into a smart eating plan. A kick of cilantro, black beans and corn means this salad's no sissy in the flavor department either.

What You Need

cups torn mixed salad greens

can (15 oz.) black beans, rinsed

pkg. (10 oz.) frozen corn, thawed, drained

large red pepper, chopped

tomatoes, chopped (about 2 cups)

cup KRAFT 2% Milk Shredded Cheddar Cheese

1/2

cup KRAFT Classic Ranch Dressing

Tbsp. chopped fresh cilantro

Make It

DIVIDE greens among 4 dinner plates.

TOP with beans, corn, peppers, tomatoes and cheese.

DRIZZLE with dressing; sprinkle with cilantro.

Substitute

Substitute 2 pkg. (6 oz. each) OSCAR MAYER Deli Fresh Southwestern Seasoned Chicken Breast Strips or 4 boneless skinless chicken breast halves, cooked and chopped, for the black beans.

This salad is really easy to make and also tastey. My family, however, did not like the flavor of the cilantro. I would suggest adding fritos for a little extra taste and crunch. Overall, I really enjoyed the salad.

Perfect Salad. The only thing I added to the recipe was thinly sliced onion. Other than that, I wouldn't change a thing. It's a keeper.

I LOVED THIS SALAD! SOMETIMES I ADD SOME GREEN ONIONS ON TOP, AND INSTEAD OF RANCH TRY SALSA ON IT.

This is a great recipie. It has great taste and fills you up. The textures is fabulous! Definate regular at my house. I also get rave reviews when I take it to gatherings. Note: I added red onions to the salad, then added garlic paste to the Ranch dressing to give it a zing. Changed the cheese to mozzerella.
