I'm not generally fond of red peppers, but this is delicious. Tastes so fresh!

I make this for me and my sister's lunch all the time. She just loves it as do I. I make it alittle more simple and leave out shredded carrots, pineapple and the pepper. it is still wonderful! i love the cashews in this mix! You have got to try it!

I took this recipe to a 4th of July potluck and everyone LOVED IT! I chopped the cashews and put them on the side for those that can't have nuts.

Try almonds instead of cashews if you expect to have leftovers, they don't get as soggy. Also try mango instead of pineapple for a slightly different taste.

It was a really good mix of flavors, and very easy to make. I little bit too much dressing maybe. Between the pineapple and dressing the chicken became a little mushy.

It was good, but husband and I kept trying to figure out what was missing. I tried adding some Chinese noodles. Think I'll try mixing in some more veggies next time, maybe some cucumbers?

Very good. I substitued chopped cashews for the almonds, that's what I had on hand. This will be a good winter salad.

This was a delicious salad, and my husband (not a big salad eater) actually wanted all the leftovers for the next day's lunch. He did suggest that next time I add more nuts and chicken. But otherwise, it was great.

This is very tasty and healthy...I'll make it all the time, although I added more cashews and skipped the pineapple.
