I made quite a few changes, and it was great. I think that this a good starter recipe. I used more potatoes (3 cups), mushrooms, green pepper and more green onions as a garnish. I also only used 5 eggs (2 without the yolks) to cut down fat and cholesterol. In effect, I added just a bit more milk for the lost liquid in less eggs. I also added 1/2 tsp. of Italian seasoning. And, I only put in 2 tbl. of light mayo. I did add 2 oz. of Light Velveeta to the very top in small chuncks, which added a nice kick. So, I suppose I hardly stuck to the actual recipe, but it was a great start to a great, light and nutritious meal.
