I made it with crumpled bacon and mayonaise and it was delicious.

Easy Fast go to use small amount of leftover vegetables you don't know what to do with.

I make this recipe all the time. Once I had no potatoes so I used Tater Tots (cut in half) , some chopped green chilies, & cheddar cheese. Every one loved it!!!

I made quite a few changes, and it was great. I think that this a good starter recipe. I used more potatoes (3 cups), mushrooms, green pepper and more green onions as a garnish. I also only used 5 eggs (2 without the yolks) to cut down fat and cholesterol. In effect, I added just a bit more milk for the lost liquid in less eggs. I also added 1/2 tsp. of Italian seasoning. And, I only put in 2 tbl. of light mayo. I did add 2 oz. of Light Velveeta to the very top in small chuncks, which added a nice kick. So, I suppose I hardly stuck to the actual recipe, but it was a great start to a great, light and nutritious meal.

I made some adjustments. I added pepper jack cheese, more green onions and green chiles. It was very yummy, my kids loved it!!

This was a WONDERFUL light meal. I didn't have any green onions, on hand, and substituted dried onion flakes and parsley for color. We put parmesan cheese on the top, for good measure. YYUUMMM!

I liked this, but my try it with the mushrooms and cheese. I didn't add the green onions as we don't care for them.

MY HUSBAND AND I LIKED IT VERY WELL. I ADDED FRESH MUSHROOMS, AND SHREDDED CHEDDAR CHEESE IN SIDE AND A LITTLE ON TOP.
