What You Need

boneless beef pot roast (about 2-1/2 lb.)

Tbsp. oil

3/4

lb. small red potatoes, halved (about 2 cups)

1/2

lb. baby carrots (about 2 cups)

1/2

lb. small wild mushrooms, such as shiitake or cremini

medium onion, cut into 6 wedges

can (10-3/4 oz.) condensed cream of mushroom soup

1/2

cup A.1. Garlic & Herb Marinade

Tbsp. chopped Italian parsley

Make It

PREHEAT oven to 325°F. Brown meat in hot oil in large skillet on medium heat. Place in large roasting pan. Arrange vegetables around meat.

MIX soup and marinade; pour over meat and vegetables. Cover tightly.

BAKE 2-1/2 to 3 hours or until meat is cooked through and fork tender. Serve with meat drippings. Sprinkle with parsley.

Great recipe!!!!! WE loved it! I used angus beef and it was soooooooo tender and WOW!!!!! My husband soooo surprised about how tender it was!!!! just make sure to use good meat, it means a lot!!!!!

My family loves pot roasts, and I have made many different recipes, but this was by all means the best pot roast that we have ever eaten. The flavor was fantastic, and my husband and kids couldn't get enough of it! This is a meal my family will eat very often. Delicious!!

Wow. I must have looked at 100 recipes trying to find the dish that resembled the one my Mom use to make. This is it!! And it tasted just as good as I remembered!! THANK YOU!!!

This recipe worked well. I used a crockpot instead, and left out the marinade and mushrooms. I used 2 large cans of cream of mushroom because I was cooking a 6 pd. roast.

The marinade made a delicous gravy. I also cooked in in a crockpot instead of stovetop. Turned out well.
