What You Need

Tbsp. oil

lb. boneless skinless chicken breasts, cut into bite-size pieces

cups baby spinach leaves, washed, dried

1-1/2

cups instant white rice, uncooked

cup grape or cherry tomatoes

can (10-1/2 oz.) condensed chicken broth

1/2

cup water

1/4

cup KRAFT Grated Parmesan Cheese

Make It

HEAT oil in large deep skillet on medium heat. Add chicken; cook and stir 7 to 8 min. or until done.

ADD spinach, rice, tomatoes, broth and water; mix well. Bring to boil; cover. Simmer on low heat 5 min., stirring occasionally.

STIR in cheese.

Substitute

Substitute 1/2 cup dry white wine for 1/2 cup of the broth. Cover and refrigerate remaining broth for another use.

Great recipe!!! dont be hesitant w/ putting in the spinach b/c it shrinks a lot when you cook it

We enjoyed this dish and make it quite often, I substitute cherry tomatoes for canned diced tomatoes in the winter. It tastes just as good.

The magazine called for Italian dressig with roasted peppers and parmesan cheese (instead of oil). I couldn't find it, so instead used Italian dressing with romano cheese. It was superb and so quick to make. My family loved it.

needs some spices such as garlic or garlic powder, salt, pepper or changing tomatoes to other veggies would be good too...other wise good quick dish

I've made this several times and it's become one of my favorite recipes: quick, light but flavorful. It was an instant hit with my grandaughter - who HATES spinach!

Everyone in my family loved this and that is rare, especially anthing containg spinach!! I added spices to my chicken before I cooked it such as garlic salt, pepper, thyme and a touch of celery salt. I also added green onions because I had some and wanted to use them up but the added onion flavor was good. I made this twice already and plan to make it again!
