I had never had jerk chicken and was a little nervous about the ingrediants, but I thought this was a wonderful recipe and extremely easy to prepare! I didn't have peppercorn ranch, so I subed regular ranch then added fresh cracked black pepper. Also, I served this on top of a bed of mixed greens, then I added mangoes to give it an island flair. For the dressing, I took honey mustard dressing and added a little lemon juice and zest. Different, but a great break from the usual!
