For a version suitable for diabetics, use the following ingredients: (4-serving size) JELL-O sugar free Vanilla Flavor Instant Pudding & Pie Filling 1 can (20 oz.) DOLE Crushed Pineapple in Juice, undrained 1 cup thawed sugar free COOL WHIP Whipped Topping 1 prepared round sugar free angel food cake (10 oz.) 10 fresh strawberries

I have made this cake 3 times since March. I made 2 for our families Easter Brunch. I had a small problem with transporting the cake, as it leans when it warms up, but it tasted great. I also made it for a pot luck luncheon at work. I broke up the cake into large pieces, and folded them into 1/2 of the pineapple mixture. Then, I packed the cake mixture tightly into a 13X9 in. roasting pan, and covered it all with the rest of the pudding mixture, and chilled as directed. Much easier to transport this way. Every bite has the pudding mixture on it, and everyone has asked for the recipe!

This is a wonderful and easy dessert to make. Made it twice, the first time following the receipe exactly, the second time used lemon pudding, as I read in the comments. Both times......no left over.

I made this last weekend and took it to the Church. I have had several of the ladies asking for the recipe. It was easy to make and delicious.

I made this cake for my sister's birthday party and it was a huge hit. I received many requests for the recipe. It was so easy and a very refreshing change from the standard cake and ice cream.

great dessert....I added coconut to the pineapple and whipped cream. Nice tropical touch.
