Pina Colada Shrimp and Rice recipe
LOVED IT! I saw where others said the rice was dry, so I added a little more coconut milk and pineapple juice. I've already shared this recipe with 2 people. Can't wait to ...read more

It takes a lot longer than specified for liquid to absorb and the taste is overall bland, bland, bland, for all that mess! Crushed pineapple, definitely, but I'd add a pinch of nutmeg and, call me crazy, a dash of cayenne. And lowfat coconut milk was a HUGE mistake (mine), the dish needs to be richer. Aschuss me.

SCRUMPTIOUS...TOTALLY AWESOME RECIPE. THIS HAS BECOME ONE OF MY FAVORITES AND GIVEN THE FACT IT IS VERY EASY TO MAKE, IT WILL BE ONE ON MY REGULARS.

This recipe was pretty good, but seemed like it was missing something because the milk and juice did not flavor the shrimp enough and the shrimp was a little boring. I think next time I will sauté some of the green onion with the shrimp and oil instead of just sprinkling it on top and I will also try the crushed pineapple instead of chunks as the other person who rated this recipe suggested. The chunks were a little overwhelming.

I really really like this recipe, and it's not only that a 14 yr old made it! (I'm 15). I like how it tasted Caribbeanish but the coconut milk is REALLY necessary so it evens out the pineapple taste. It was a WONDERFUL dish, and I would recommend CRUSHED pineapple instead of CHUNKS.

Here is the problem with this recipe. my husband is allergic to coconut so I can't use the coconut milk or the flake coconut for the top. I will probably make this recipe without the coconut additions and instead add something else. Whatever I do I will post it at a later date.

This recipe was easy to make & quick. I used the juice from the canned pineapple & added a little water to make the full cup instead of the juice. My family really enjoyed it, even my son who doesn't usually like seafood said he'd like me to make again.

This was very bland. It needed some kind of spices or something to kick it up. I tried adding salt, but that didn't help. I won't make this dish again, and I probably will end up throwing out the leftovers. Bleh!

Absolutely fabulous!! This recipe adequately fed my family of 5, 2 adults, 3 kids. Everyone thought it was good. It does have a milder coconut flavor than you would think. I used precooked shrimp, to cut a step out, turned out wonderfully! This is added to our meal rotation!!

My husband and I really enjoyed this recipe. We found it to be very flavorful and simple to make. Since there are only 2 of us, we cut the recipe in half and it was plenty of food along w/a side veggie.
