What You Need

onion, finely chopped

Tbsp. olive oil

cups instant white rice, uncooked

1/2

lb. fresh asparagus spears, cut into 2-inch lengths

cups chicken broth

Tbsp. PHILADELPHIA 1/3 Less Fat than Cream Cheese

Zest and juice from 1/2 lemon

Make It

COOK onions in hot oil in large skillet on medium heat 2 min. or until tender.

STIR in rice, asparagus and broth. Bring to boil; simmer on low heat 5 min.

ADD reduced-fat cream cheese, lemon zest and juice; cook until cream cheese is melted and mixture is well blended, stirring constantly.

Examine tips of asparagus for signs of freshness. The tips should be closed and not too dry. A wrinkle in the stem or breaking down of the tip identifies old asparagus.

Serving Suggestion

Serve this risotto with grilled chicken or shrimp.

Substitute 1/2 cup dry white wine for an equal amount of broth.

This dish is so wonderful!! I cooked it as a side with the Roasted Garlic and Nut-Crusted Fsh and it complimented the fish perfectly! Would highly recommend!!!

Didn't turn out how I thought it would but still tasted good. I added some shredded parmesan to it at the last minute and that was nice. I would make this again, went well with chicken.

This recipe definitely a keeper - absolutely delicious! Served it with broiled sole and my husband loved it. Can't wait to serve it to company and get their reaction.

Easy to make, absolutely delicious. The balance of the cream cheese and lemon was wonderful. Decreasing the amount to 1/2 lemon was evidently the right choice. I will make this again.
