Stuffin' Egg Muffin

Stuffin' Egg Muffin recipe

I made this for a brunch. While it wasn't a disaster, it wasn't a hit either. Very bland.

I liked it, even my kids did too, but I think next time I'll do sausage instead of bacon to give it a bit of spice.

GREAT! Very easy to make, my kids loved it. Next time I'll try adding different things (sausage, etc.). This will be one of our regular breakfasts!

This recipe was easy & delicious. I prefer to use mozzarella and cheddar cheese and I lightly whisk the eggs before pouring them into the stuffing cups. This has become our new favourite brunch recipe!

This was a great and easy recipe! Next time, I will add spicy sausage & mushrooms to the stuffing to give it a little kick, and break the yolk. I served them with sour cream and chopped green onions. They are very portable, and reheat wonderfully. I can't wait to make them again...

I used egg substitute and they didn't quite turn out the way I expected. They were flat and and the texture was thicker than I was hoping for. They were still good, but maybe they would have been better had I gone strictly by the recipe.

I recommend scrambling the eggs before adding them, otherwise this is a fantastic recipe that I have served for breakfast or as part of a breakfast buffet many times.
