Stuffin' Egg Muffin

Stuffin' Egg Muffin recipe

Press stuffing mix into a muffin tin. Add an egg to each cup and top with bacon bits and cheese. Bake 20 minutes—then accept praise for your brilliance.

I have made this a few times. Very easy to scale down for two people. I also have used a couple of different cheese blends, so far they all work well.

This was a lot less putzy than I thought it would be. Very good. Got rave reviews from the family. I had to divide a few cups of their stuffing to fill the remaining two. I had one cup that overflowed with egg, but I think that egg was a little bigger than the rest. I also put the muffin tin on a large cookie sheet, just in case there were any drips. Great recipe! Will definitely make again.

Very good for feeding a group of people. I also used medium muffin pans and small eggs to get a few more Stuffin' Egg Muffins!

These are really good. Plus they are fun and a great quick portable breakfast or lunch. I did experience similar problems with the eggs overfilling and sticking to the pan. But I don't think that's Kraft's fault. I think that all muffin tins are slightly different, and so everyone needs to experiment and find out which size egg works best with the size of their muffin cups. I also only had enough suffing for 9 muffins, but that was ok.

I served this at a meeting and they all raved about it. I doubled the recipe and used a 13 x 9 pan instead of muffins. I also used pork flavored stuffing and ham. I patted the stuffing in the bottom, mixed all the other ingredients in a large bowl and poured it over the stuffing. Worked great for a large batch.

The taste was good, but my eggs were far too large. Be sure to look for the smallest eggs possible, as Large-sized ones made a mess of the muffin sheet.
