Was a good get-together recipe, but I would use a little less stuffing in the mixture because the flavor was a bit overwhelming.

I was surprised that my family liked this, but I didn't tell them that it had spinach in it until they told me how good it tasted! My husband even thought it made a good lunch the next day.

I have made this recipe twice and everybody in my family (including my two year old) loved it. It is simple, fast, and meatless, which I love so we can rest from eating meat everyday.

Wanted to make a quick one dish supper meal so I added a small cooked shredded cooked breast. I will add salt and pepper to the onion, pepper, and spinach mixture next time before adding to the rest. Made in May 2005 sos I made a fresh garden salad using a variety of lettuces and radishes from the garden.
