This was a quick, easy alternative to fried potatoes (french fries)! Even better that it was low-fat & tasty!

My hubby is a big health nut, but we both love french fries. Its really nice to be able to still have them, but in a healthy version. I've used different dressings and they still turn out good. These always stay on our dinner list.

Delicious, and best of all, guiltless! You can even dredge a brush in the dressing/parmesan mixture and brush the potatoes after coating them for more flavor.

My kids were hesitant to eat because they looked "different" but once they tasted them they gobbled them down with my husband and I. Excellent taste, even better that they are low in fat.

Make sure you cook these long enough so that they are crispy on the outside and completely soft on the inside. A few of our thicker fries weren't quite cooked all the way through, but these were great and my husband loved them too. Also be careful when flipping them overhalf way through or all the "good stuff" will slide right off the fries!
