I make it every summer. Everyone loves it & asks if we're having it.

My family and neighbors love this cheesecake. I did make one adjustment, I substituted melted apricot preserves for the whip cream and then chilled it. It was really good! I have made it with the whipped cream also and everyone loves that just as much. Will make this again definitely, actually for my family reunion this weekend.

I doubled the crust. This cake is very good and easy to make. I made it twice so far and I each time I changed the fruits on top. Everybody loved this cake !!!

This has great eye appeal, but it didn't quite live up to my expectations. I made a lower fat version; I used a whole box of red. fat vanilla wafers, two blocks of 1/3 red. fat cream cheese, one regular block, and one fat free block. I used half Splenda and half regular sugar. I used plain fat free whipped cream and added strawberry juice from a container of frozen sliced strawberries (the best part of all!), and did all the fresh fruit. I cooked it using convection, and I overcooked it a little (325 for 50 min)...tasted best at room temp. It really was spectacular presentation though! Make sure you let your cream cheese soften though....it's super difficult right out of the fridge.

I absolutely love this cheesecake! I've made it so many times and will continue to...I cut the recipe in half and just buy the Nilla Wafer Crust at the grocery store, saves time and money! I bring the cheesecake to as many bbq's as I can!!! Definately recommend this recipe...and its not hard at all!!

made this cheesecake for a faimily gathering and it was a big sucess, only in making it you need to double the crust, single recipe isn't enough to cover the bottom of the pan.

Making this is a lengthy process, but well worth it. I changed some ingredients to Low Fat or Sugar Free, but noone could taste the difference. VERY GOOD!

Double the crust

I made this for Easter and got many compliments! The only thing was I had to double the amount for the crust to get it to spread across the whole 13 x 9.
