Very good and very easy. Helps that it's made with ingredients that I usually have on hand, too! My husband deemed it a "do-over" -- his highest praise!

The filling turned out great, but overall the dish was too dry. I think this is a great starter for enchiladas, but I will have to play around and find something to add to it.

This was so easy and cheap to make. My hubby loved it and he did not even know how low fat it was. I paired it with a salad and it was a good, healthy dinner.

All I had was onions, black beans, salsa, cheese, tortillas and hummus.This turned out great..and so quick and easy. Will make again!

Not only did i enjoy these enchiladas but my children which are very picky enjoyed it also. I love the fact that the recipe gives you so many options on what you can make these enchiladas with.

Easy to make and flexible enough to feed people with picky tastes. Not a traditional enchilada meal - more of a blend of tacos and fajitas. They were definately a big hit - family requested it twice in one week! Great with spanish rice.
