I loved this recipe. I do not like enchilada sauce, so this variation was great. It was very easy to make after work. My 3 year old loved it!!

I'm hispanic and, trust me, this is NO WAY to make enchiladas. I definately don't recomend this recipe. If you want semi-descent enchiladas, buy the already made ones at the store. Those are much closer to the original kind.

First time I made these. Everyone liked them, even my VERY picky eaters. I used chicken instead of meat and everything was great. Added bonus was we used our garden fresh veggies-made everything better.

the whole meatless thing is great. enchiladas used to be my favorite meal before going on the vegie diet, so this way, i still win. =]

I wasn't an enchilada fan but my husband is. I made this recipe and it was easy and very good. I used a bit more cheese than called out for which added to the flavor and made it more melty. Wonderful receipe that can be easily altered.

I precooked the beef with peppers and onions the night before to save time (weeknight dinner!). I seasoned the meat with chili powder for extra flavor. The next day I combined the meat mixture with the cheese and salsa, and I added some sour cream and cilantro to the mix as well. The meal came out great, would definitely make this again.

It was very good, but next time i would use more salsa and sprinkle with fresh cilantro to add more flavor.

Used sirloin, fiesta corn, onions, green chiles, black beans, and enchilada seasoning in stuffing. Topped with taco sauce, more chiles, salsa and cheese. Served with Sr. Cream. So good!! family raved for hours!!!!!!
