what you need

Take 2 cups TACO BELL® Thick & Chunky Salsa and 10 flour tortillas (8 inch) and mix & match your recipe from these options...

meat options	vegetable choices	KRAFT Shredded Cheese possibilities
1 lb. boneless skinless chicken breasts, chopped	1 can (2.25 oz.) sliced pitted black olives, drained	Four Cheese Mexican Style
1 lb. lean ground beef	1 medium red pepper, chopped	Cheddar
1 lb. boneless pork, chopped	1 medium onion, chopped; 1/2 cup corn	Four Cheese Mexican Style
meatless: 1 can (15 oz.) black beans, rinsed and drained (add with 1/2 cup cheese)	1 medium each red pepper and onion, chopped	Monterey Jack

Make It

PREHEAT oven to 350°F. Cook meat and vegetables in large nonstick skillet sprayed with cooking spray 5 to 6 min. or until cooked through. Drain, if necessary. Stir in 1/2 cup each of the salsa and KRAFT Shredded Cheese.

SPREAD 1 cup of the remaining salsa onto bottom of 13x9-inch baking dish. Spoon 1/4 cup of the meat mixture down center of each tortilla; roll up. Place, seam-sides down, on salsa. Top with the remaining 1/2 cup salsa and additional 1 cup shredded cheese.

BAKE 20 min. or until heated through.

I used ground beef and added a can of refried beans to the burger and mixed it while hot then rolled in the wrap and topped with green chopped onions cheese and baked then added sour cream...This was delicious...

MY ENTIRE FAMILY - IN LAWS INCLUDED LOVED THIS DINNER - IT WAS RELATIVELY EASY AND DELICIOUS - I HAD NEVER MADE ENCHILADAS BEFORE BUT NOW IT IS A ONCE A WEEK FAVORITE IN MY HOUSE - YOU GOTTA TRY THIS!

I cooked onions and put some cheese inside. It was very good and easy. A nice change from regular tacos.

I liked this ver much as a teenager it dont really have time to make mushc food but this was easy and fun ENJOY : )

I don't really know how to cook but I want to learn. This was my second attempt at preparing a grown up dinner and it was delicious. It was quick and easy. I made it meatless and created a sauce to serve with it consisting of 1 packet of taco seasoning mixed with 16 oz. of sour cream.

I made the ground beef enchiladas, and they were excellent. I had to use two pans the larger reccomended one and the a smaller one because they all would not fit into one. I also wondered what the point of the salsa on the bottom of the pan, well one had no salsa under it and it kind of stuck. It was a easy recipe, very very good, my husband, children ages 6 and 10 loved it. It was wonderfull and anyone should give it a try. Another excellent recipe from kraftfoods.com Thanks
