very good even a few days after it's been made. Took me longer to make than stated. Not something I'd make any old day but a nice change from your typical potatoe salad

Oh-so-yummy!! Good warm or cold. Easy to fix, elegant looking. I used a bag of mixed mini potatoes (some red, some purple, some yellow). Beautiful & delicious! Next time I will add some sliced olives.

I won first place at an outing with this potato summer salad and it is so easy to make. My son loved it and he never eats potato salad!

This is the perfect potato salad for a barbeque cookout! I made it for our annual memorial day kickoff party at the lake. The young adults in our group devoured it!

It looks better than it tastes. I was a little disapointed. It needs salt or something because it was just a bit bland. Maybe it would be better with gnocci instead of potatoes.

Wonderful blend of ingredients, and colorful presentation! I used reduced fat mayo instead. I added crisp tender cut green beans and substituted green onions, as red onion is a little too strong at times. Went over very well at church luncheon. I sent this recipe to several people and I will make this whenever potato salad is called for.
