I used the diced tomatoes and made this recipe even easier. Did render it down a bit. Perfact for my cooking needs.

My daughter Katie prepared this one skillet meal for Sunday dinner. I stayed out of the kitchen until she had it prepared and the dining table set. The aroma that filled the living room was that of an authentic Italian kitchen. She substituted the white rice with brown rice and used all fresh ingredients. Delicious!!! This dish will become a staple at our place. The rice mixture itself would make a great side dish. Katie, you may cook for mom anytime!

The flavor is great, especially with the fresh tomatoes! I added green pepper and hot sauce. I thought it definitely needed a little bit of a kick, but I loved the bruschetta flavor they are going for in this recipe, just wish it had been a bit stronger. The beef wasn't as good when I reheated it for leftovers.

This was awesome! Even my picky 4 year old son loved it (without meat for him of course). So quick and easy! Will definitely add to family favorites!

I have made this many times, but w/ different variations. I would recommend cooking the steak in butter and seasonings/herbs first and adding it at the end w/ the cheese. Very good.

This is one of my favorite's! The combo of the ingredients tastes just like real bruschetta. This recipe has become one of my "regulars". The mozerella subsitution sounds like a tasty alternative; I may try it even though I think the original ingredients are perfect. :) I would highly recommend you try this meal!
