Beef Bruschetta Skillet

This easy beef skillet has bruschetta-style ingredients and is ready in just 30 minutes. Oh, and it's better for you too. Win, win, win.

What You Need

lb. beef sirloin steak, cut into thin strips

tsp. oil

large tomatoes, chopped

can (14 oz.) beef broth

cloves garlic, minced

tsp. dried basil leaves

1-1/2

cups instant white rice, uncooked

1/2

cup KRAFT Shredded Mozzarella Cheese

Make It

COOK meat in hot oil in large nonstick skillet on medium-high heat 2 min. or until evenly browned, stirring frequently. Remove meat from skillet; set aside.

ADD next 4 ingredients to skillet. Bring to boil. Stir in rice; return to boil.

STIR in meat; top with cheese. Cover. Simmer on medium-low heat 8 to 10 min. or until heated through.

Substitute 1 undrained 14-1/2-oz. can diced tomatoes for the chopped fresh tomatoes.

I tried the long route and I simmered the cut up sirloin in beef broth for 3 hours. The dish was fantastic and the meat melted in your mouth. The quick recipe might make the meat tough but if you have the time simmer the meat instead.....mmmmm!

I have made this 3 times since I received my latest Food and Family magazine. It is wonderful! The smell of garlic, basil and tomatoes filled my house! Even my 8 year old (who wouldn't go near a tomato!) loved it. I even left out the Velveeta for a lighter version. Both were just wonderful.

There was very little taste and was almost inedible without adding ketchup or hot sauce

It was easy to make and my family loved it! There was not a grain of rice left! I made it without the cheese and I used brown rice.

It seemed as if everything just glooped together. I would try this again maybe not cooking so long. My 5 year old son said "Actually mom this isn't that bad"
