When Kraft used to send the monthly or quarterly magazines, I cut this recipe out. At that time, it was the same recipe but you didn't cook the corn. I still make it and it is DELICIOUS!

I added some crumbled feta cheese and served along side grilled tuna. This was a great salsa or salad. Perfect for summer eating.

I added a can of drained and rinsed black beans, chopped black and green olives, chopped red pepper, lime juice and served it in lettuce leaf cups for a salad. All the additions cooled the heat plus it was super tasty, colorful and easy.

I keep the ingredients for this on hand at all times. I use mexicorn instead of fresh corn, and I freeze the fresh cilantro and parsley to use as needed. When I take this somewhere I have to double the recipe. But I also mix up smaller amounts and use it as a topping on tacos, burritos and fajitas. I even added some to a quiche recipe once and it was delicious!

I added a couple of squirts of lime juice too. It's slightly spicy with one jalapeno!
