I usually make a batch of this a week, keep it in the fridge, and top my greens with it to make a wonderful salad for work.It is wonderful. Thanks for the great recipe. I have also added black beans to it for added fiber at times.

This was a very good recipe. The second time I made this I added a half of teaspoon of lime juice and salt instead of italian dressing. D-LICIOUS!!!!

I have made this twice now, once put everything except the corn and black beans in the food processor. Quick and easy!!! Everyone loves it, and several have asked for the recipe. I add lime juice, corn (fresh or canned, drained) and black beans (drained).

Everyone loves this dish. I use it as a vegetable with some type of food done on the grill. Grandkids really like it.

I also added a cup of rinsed black beans and an avocado (diced) and it was a HUGE hit!!

long ago i had a special request from vegetarians and a used this recipe for chiles rellenos they loved me for that. I did added black beans to the salsa. they were to die for, that was their answer to my dish.
