I made this for company and served with chicken enchiladas. It went over really well. I didn't have minute rice, so I just made regular rice and then added in the salsa and cheese and mixed it up. Still turned out great!

I have made this numerous times, and I've found that cooking the rice in light chicken broth gives it more flavor.

I added a little hamburger with taco seasoning. The whole family loved it with doritos and in taco shells. I think it would be excellent with chicken so I think I will try add in of that next.

This was a good recipe. I made it with medium salsa, which worked out very well.

This was good but a little more flat than I expected it to be, probably because I used a mild salsa. I'll make it again and use a medium salsa and chicken broth instead of water for a little more flavor. Good with Kraft's Chili Parmesan Chicken.
