I have prepared these many times now and my youngest is now following the recipe herself. We love the zap, and sometimes I add a little mushrooms and pepper jack cheese. Its a favorite in this home!

Some other excellent additions are: grilled chicken breast or steak strips and black or refried beans

I substituted the green onion for the cilantro.

I liked the extra-crispy texture using the grill gave to the quesadillas. Easy to make and tasy (although I skipped the cilantro)!

I loved that I can make these on the grill. I used green onions & chicken as well. Turned out great!

1 tablespoon of cilantro was a little too much here (for half a tortilla!), try 1/2 or 3/4 tbsp. With that much cilantro you can't taste the cheese. Otherwise these were very good and I'll definitely make them again.
